Tamarind Chipotle Sauce

      Yield: 3 cups 
  
      1    Block of Tamarind paste 
           -about 14 ounces 
      2 c  Water 
    1/2 c  Dark Brown Sugar 
      2    Cloves of Garlic 
      2    Chipotle chiles in adobo 
           Juice of one lime 
           -Option 
      2 ts Minced mint leaves 
  
  Add the Tamarind paste to the water and heat gently, stirring until smooth. 
  Place in a blender and puree together with the sugar, garlic, chipotles, 
  and 
  adobe / (adobo) sauce. Then add the lime juice and blend in. Serve slightly 
  warmed. 
  This sauce goes very well with any pork dish, especially barbecued pork, or 
  with seafood such as shrimp and soft-shelled crab, especially when combined 
  with a little mint.
