Lebanese Herb Salad

      Yield: 4 servings 
  
      1    Pita bread                          1 tb Fresh mint, chopped 
    1/2    Head leaf lettuce; washed,          1 tb Sumac 
           -dried, and chopped               1/4 c  Olive oil 
      1 bn Cilantro; chopped                   2    Lemons; juiced 
      1 bn Scallions; thinly sliced          1/2 ts Cinnamon 
      3    Tomatoes; diced                          Salt & pepper to taste 
      2 tb Fresh parsley, chopped          
  
  Bake the pita bread so that it is dry.  Break the bread up into small 
  pieces and set them aside. 
   
  In a medium bowl place the lettuce, red bell peppers, cilantro, scallions, 
  tomatoes, parsley, mint, and sumac.  Toss the ingredients together. 
   
  Add the olive oil and toss it in well. 
   
  Add the lemon juice, cinnamon, salt and pepper.  Toss the ingredients 
  together well. 
   
  Add the pita bread pieces and toss them in.
