Tangy Banana Bars

      Yield: 12 servings

      1 c  Brown sugar; firmly packed 
    1/2 c  Margarine or butter 
      1    Jar apricot preserves-10 oz 
      1 ts Vanilla 
      2    Eggs 
  1 3/4 c  All purpose flour 
    1/2 ts Baking powder 
    1/2 ts Baking soda 
      1 c  Bananas; thinly sliced about 
           -2 medium 
    3/4 c  Nuts; chopped (your choice) 
           Powdered sugar 
  
  Heat oven to 350 degrees.  Grease 13 x 9-inch pan. In large bowl, combine 
  brown sugar, margarine, preserves, vanilla, and eggs; blend well. Lightly 
  spoon flour into measuring cup; level off.  By hand, stir in remaining 
  ingredients except powdered sugar; mix just until blended. Pour into 
  prepared pan. 
   
  Bake at 350 degrees for 30-40 minutes or until toothpick inserted in center 
  comes out clean.  Cool completely; sprinkle with powdered sugar. Cut into 
  bars. Makes 36 bars. 2 bars = 228 calories, 8 g fat.
