Moist Chocolate Cake

 Categories: Chocolate, Cakes/choc. 
      Yield: 6 servings 
  
      2 c  Flour                                    Minutes.  Add eggs and 
      1 ts Salt                                     -vanilla; beat 2 more 
      1 ts Baking powder                            -minutes (batter 
      2 ts Baking soda                              Will be thin).  Pour into 2 
    3/4 c  Unsweetened cocoa                        -greased and floured 9" cake 
      2 c  Sugar                                    Pans.  Bake at 325 degrees 
      1 c  Oil                                      -for 25-30 minutes.  Cool 
      1 c  Hot coffee                               -cakes 
      1 c  Milk                               15    Minutes before removing from 
      2    Eggs                                     -pans. Cool on wire racks. 
      1 ts Vanilla extract                          Meanwhile, for icing, 
           Favorite Icing:                          -combine the milk and flour 
      1 c  Milk                                     -in a 
      5 tb Flour                                    Saucepan; cook until thick. 
    1/2 c  Butter, softened                         -Cover and refrigerate.  In 
    1/2 c  Shortening                               -a 
      1 c  Sugar                                    Mixing bowl, beat butter, 
      1 ts Vanilla extract                          -shortening, sugar and 
           For cake, sift together dry              -vanilla 
           -ingredients in a mixing                 Until creamy.  Add chilled 
           -bowl.                                   -milk/flour mixture and beat 
           Add oil, coffee and milk;                -for 
           -mix at medium speed for 2         10    Minutes. Frost cooled cake.
